A Study of Time and Motion of the Kitchen of the Student Cafeteria(¥°)


Abstract
To study the total length of the time and motion of the employees observations have been made for the preparation of the lunch for 500 people in the kitchen of the Student Cafeteria, Ewha Womans University. The observations on June 4, June 11, June 12, Sept. 4, Sept. 27 and Sept 30 were random sampled including one no rice day and two other days.
The result of the average of the three observations of the total length of the motions was 50599.83m and the average length of the motion per one employee was 2185.4m. The average of the three observations of the total length of the time per day was 8908.7 minutes and the average of the length of the time was 357.6 minutes per day per one employee.
To shorten the length of the time and motion, it is suggested that the kitchen would be made square shaped rather than rectangular and less spacious than the one at the present; and that to shorten the unnecessary operations training the employees, using modern automatic machines such as dish¡©washing machine were suggested.
